First Course:
Lump Crab cake, local micro greens, remoulade
Paired with Petite Manseng
Our Petit Manseng is a full bodied and aromatic white. It is entirely aged in French Oak barrels, for 8 months, yet the fruit character remains dominant, with hints of pineapple, mango, vanilla, and toasted walnut. This varietal is especially acclimated and resilient to our terroir, resulting in a later harvest than most lots of Petit Manseng around the world.
Second Course:
Providence Farm NY Strip, baby roasted potatoes, caramelized shallots, creamed spinach
Paired with Fearful Symmetry
A medium bodied blend of Norton, Malbec, Cabernet Franc, and Tannat with prominent aromatics. Characterized by notes of blueberries, pine, dark cherry, and smoked cedar, paired with elegant tannins. Dominated by the overripe fruits of Malbec but balanced by the earthy qualities of the Norton to create a highly complex wine with a long and rounded finish.
Third Course:
Madagascar vanilla creme brulee, fresh berries
Paired with Naturel Petillant Rose
The exclusive, limited batch of Pétillant Naturel Rosé is crafted using ancestral French methods. This sparkling wine, with its cloudy allure, is made from 100% estate-grown Cabernet Franc grapes. Experience the joy of natural effervescence.
