Reminiscent of a Provence style rose\, pale in color\, light in body\, and a bit tart. Notes of raspberry\, hibiscus\, white cherry\, and apple blossom leads to a crisp and refreshing finish. \n\nSecond Course\nSeared Sea Scallops\, Creamy Truffle Mushroom Orecchiette Pasta\, Baby Spinach\, Crispy Onions\nserved with Petit Manseng – Petit Manseng is a full bodied and aromatic white. It is entirely aged in French Oak barrels\, for 8 months\, yet the fruit character remains dominant\, with hints of pineapple\, mango\, vanilla\, and toasted walnut. Characterized by notes of blueberries\, pine\, dark cherry\, and smoked cedar\, paired with elegant tannins. Dominated by the overripe fruits of Malbec but balanced by the earthy qualities of the Norton to create a highly complex wine with a long and rounded finish. \nThird Course:\nMadagascar vanilla creme brulee\, fresh berries\nPaired with Naturel Petillant Rose\nThe exclusive\, limited batch of Pétillant Naturel Rosé is crafted using ancestral French methods.
